  • Black-eyed peas: 1 small Tin
  • Peeled tomatoes: 1 small Tin
  • (Onion, cut into slices): 1
  • Cloves of garlic (crushed): 2
  • Peppers (green and red): 2
  • Courgette: 1
  • Leek: 1
  • Laurel: 1 Sheet
  • Small cauliflower: 1
  • Salt: taste.
  • Pepper: taste.
  • Olive oil: 4 Tbsp


Pour the onion and the garlic in a pan and heat, add the olive oil and let the onion pop.

Add the tomato, chopped coarsely with the sauce, bay leaf and bring to a boil.

Add the chopped peppers into strips, the courgette and the French garlic cut into slices, the cauliflower in the branches, season with salt and pepper, stir, cover and simmer for 10 minutes.

Add the beans with the sauce and stir gently and let it cook for another 5 minutes.
