Pancakes with vegetables

  • Eggs: 4
  • Milk: 0,5 dl
  • Flour: 100 g
  • Garlic: 2 teeth
  • Red pepper: 1
  • Onion: 1
  • Tomato: 2
  • Courgete: 1
  • Eggplant: 1
  • Salt and pepper: taste.
  • Chili: taste.
  • Chilli: 1 (optional)
  • Olive oil: taste.


Break the eggs and mix slightly. Add the milk and flour and mix well, Season with salt, pepper and red pepper. Book.

Prepare the vegetables: open the peppers and the tomatoes, remove their feet, the seeds and cut them into small pieces. Wash the courgete and the eggplant. Peel the onion and the garlic and cut everything into pieces.

Heat the olive oil in a saucepan and sauté the garlic. Add the green pepper and cook for a few minutes. Add after the onions, the tomatoes, the courgete the eggplant, stirring frequently. Leave on a low heat until cooked (about 10 minutes). If you want to add the peppers, seeded and cut into pieces.

In a lightly greased pan, put a ladle of soup, pancakes. You can do several at a time. Turn when they are cooked.

In each pancake, pour a generous scoop of the vegetable mixture. Serve hot.
