Meatballs vegetarian mushroom

  • Bread the day before: 500 g
  • Soy milk: taste.
  • Mushrooms: 300 g
  • Onions: 2
  • Margarine: 20 g
  • Soy lecithin emulsion: 2 tablespoons
  • Chopped parsley: 1 sprig
  • Flour: taste.
  • Vegetable broth: 2 litres
  • Salt and pepper: taste.


Remove all the code of the bread. Cut the ball into pieces and place in a bowl covered with a little soy milk tepid.

Clean the mushrooms and cut them into small pieces.

Chop the onions and mild to cook in the margarine. Add the mushrooms and cook to reduce the sauce from the cooking.

Squeeze the bread crumb and mix it with mushrooms and soy lecithin. Season with salt and pepper, add the chopped parsley and a little flour to give more consistency. Let cool.

Make small balls with the hands.

Boil the vegetable broth and cook the meatballs. When they came to the surface it is a sign that they are cooked. Remove, let it drain and serve.
