Ingredients

  • Mini corn Vanduzi: 120 g
  • Peas: 120 g
  • Okras Vanduzi: 200 g
  • Green beans Vanduzi: 150 g
  • Malagueta Vanduzi: 1
  • Onion: 1
  • Oil: 2 tablespoons
  • Vegetable broth: 4 dl
  • Coconut milk: 3 dl
  • Curry powder: 1 tablespoon
  • Salt: taste.
  • Chopped coriander: taste.

Directions

Cut the green beans in half and cut the okras in thick slices.

Peel the onion, chop it and lay it for a pot.

Add the oil, heat and leave to cook until the onion is transparent. After you add the curry powder and stir very well.

Add the vegetable stock and the peppers, cut into strips and bring to the boil.

Add the vegetables and let them cook for 10 minutes.

Add the coconut milk, check the salt and leave to cook until stay with a creamy sauce.

Sprinkle with the chopped coriander and serve with white rice Aunt Rose.
