Liquor Cherries of the Jerte

  • Cherries of the Jerte D.O.P.: 1/2 kg
  • Brandy: 1/2 litre
  • Sugar: 1/4 kg
  • Water: 1 cup


First wash cherries, remove them peduncles and, without the gin, crush them in a blender. Put them in a bowl, covered with a cloth and leave it to ferment in a cool place, out of the refrigerator.

After three days, scald a glass jar in boiling water. When it is dry, put it, the cherries were crushed in spirit.

Close the jar tightly and leave to macerate for two months. The next step consists of sieving with a filter fabric liquor and put it in a pot sterilized. Then mix the sugar with the water, and, after boiling for five minutes, leave it to cool and add the brandy cherries.

Cover and leave to macerate for two months. Finally, bottle and is ready to be consumed.
