Caldo verde I

  • Potato: 1,5 kg
  • Onion: 200 gr
  • Sausage: 150 gr
  • Cabbage-galician: 500 gr
  • Olive oil: 1 dl
  • Salt: taste.


Peel, wash and cut the onions and potatoes. Light-to-bake in 2 litres of water. Add the sausage to cook. Pull it out of the water, cut into slices and save. Reduce the mashed potatoes and onions. Bring it back to the heat until boiling. Wash the cabbage and cut finely. Join the mashed potatoes and season with salt. Let simmer for 3 or 4 minutes, without covering. Remove from the heat and serve, together with a slice of sausage and a drizzle of olive oil raw.
