Pickled cucumber with Red Wine Vinegar and Chilli

  • Cucumber, cut into julienne: 4
  • Chopped onion: 175 g
  • Red Wine vinegar: 110 g
  • Granulated sugar: 20 g
  • Flower of salt: taste.
  • Malagueta incarnate without seed and minced 1
  • Chopped coriander: 5 g
  • Salt: 20 g


Mix the salt with the juliana cucumbers and drain the water that will yield during 20 minutes. Wash the juliana cucumber with water in order to take in as much salt as possible.

Put the chopped onion, the malaguetas, Red Wine Vinegar, salt, and sugar in a pan and boil. Put the Red Wine Vinegar boiled in juliana cucumbers, and allow to cool. Finally, add the chopped coriander.
