  • Butter: 250 g
  • Flour: 1 coffee Spoon
  • Wine vinegar: 1 coffee Spoon
  • Water: 1 Tablespoon
  • Egg: 1
  • Mustard: to taste
  • Salt: to taste
  • Pepper: to taste


Dissolve the flour in a mixture of water and vinegar. Stir in the egg yolks and stir prepared. Embed 30 g of butter and bring to thicken in simmer. Sprinkle salt and pepper to join the rest of the butter. Keep warm in a water Bath. To finish putting together the mustard.
