Salad with warm goat cheese and spinach

  • Goat cheese: 300 g
  • Baguette: 4 Slices of bread
  • Bacon: 8 Slices
  • Honey: 1 Tablespoon
  • Juice of 1 lemon:
  • Extra virgin olive oil: 3 Tablespoons
  • Pine nuts: 2 Tablespoons
  • Salt and pepper freshly grind:
  • Spinach - baby: 2 Hands full


Cut the cheese into 4 slices equal. Torch the slices on the grill in the oven pre-heated during 2-3 minutes, or until a golden brown. Torch the slices of French bread for about 1 minute on each side, or until they are with a beautiful brown. Fry the bacon in a frying pan until crispy drain on kitchen paper.

Meanwhile, mix the honey with lemon juice, olive oil and pine nuts. Season to taste with salt and pepper.

Arrange the spinach in each of the dishes, then add the bacon and a slice of toasted baguette. Place the cheese sandwiches and toasted on the baguette, sprinkle it with the sauce and serve immediately.
