Skrei of Norway in the oven with a mustard crust

  • Skrei of Norway (cod cool): 500 g
  • Flour: 1/2 Cup
  • Unsalted butter: 100 g
  • Grain mustard: 2 Teaspoons
  • Parmesan cheese (grated): 2 Tablespoons
  • Cream: 1 Tablespoon
  • Apples: 2
  • Asparagus: 12
  • Tomato paste: 1 Tablespoon
  • Cider vinegar: 1/4 Cup
  • White wine: 1/4 Cup
  • Broth, vegetable or fish: 2.5 dl
  • Lemon thyme: taste.


Mix the flour with the thyme, basil, tarragon, half of the butter, mustard greens, parmesan and fresh cream until a homogeneous paste. Put a little bit of this folder over the top of the loins of Skrei and place in refrigerator for 30 minutes.

Pre-heat the oven to 220 degrees celsius. In a saucepan, heat the remaining butter over medium high heat, add the apple, peeled, sliced and let brown Put them on a plate for your dates and book the pan without washing.

Place the Skrei a dish from the oven and take the bake for about 10 minutes. Return the pan to the heat, add the tomato paste, vinegar, wine and broth, vegetable or fish and let it be seen.
