Cake with Pumpkin with Nuts

  • 4 eggs
  • 250 g of sugar
  • 400 g of pumpkin, cooked well drained and reduced the puree
  • 2 dl of olive oil
  • 350 g of wheat flour
  • 200 g of walnut kernels, chopped
  • 1 teaspoon of baking powder
  • 1 teaspoon of bicarbonate of sodium
  • 1 teaspoon of cinnamon powder
  • a pinch of sea salt
  • frosting


In a bowl, whisk the eggs with the olive oil, add the pureed pumpkin. Gradually adding flour previously mixed with baking powder and baking soda, sugar, cinnamon and salt.

Finally, fold in the chopped walnuts. Pour into prepared in a form previously well-greased with butter and sprinkled with farinha.Leve bake in a medium oven for about or 1 hour (you may want to check if it is cooked).

Unmold and after cooling, cover with frosting.
