Apple cake, almond and ice cream

  • Egg: 4
  • Olive oil of peppermint and lemon: 1 dl
  • Flour: 400 g
  • Baking powder: 2 coffee spoons
  • Apple: 500 g
  • Toasted almond: 80 g
  • Cinnamon powder: taste.
  • Sugar: 500 g
  • Ice cream: 6 balls
  • Mint to decorate: 6 sheets


Peel the apples, cut into cubes and place in a mixer bowl with olive oil and sugar, and emulsify in order to obtain a homogeneous cream. Place the prepared earlier and the eggs in the mixer for 1 minute. In a bowl, stainless steel, place the flour, baking powder, cinnamon and almonds, pour the prepared mixture and engage with the help of a spoon. Light-to-bake on greased baking sheet with butter and sprinkled with flour, oven heated to 160ºC 1h30 min approx.
