  • Black pudding Sources: 100 g
  • Pineapple: 50 g
  • Red wine Vineyards of the Queen: 100 dl
  • Olive oil Mill Biological: 10 dl
  • Pineapple to rodelinhas: 50 g
  • Sugar Farm: 10 g
  • Coriander Sources: taste.


Start by making a reduction, using the sugar and pineapple. Carameliza a bit and add the red wine.

Always at the fire, let it reduce the alcohol content. At the end grinds. Fry slightly (“mark”), in a little olive oil, the rodelinhas pineapple and the black pudding. Emprata, overlaying a rodelinha pineapple on a slice of sausage and firing with a blade of coriander.

Finally pour a little of the reduction.
