Clams with sausage

  • Clam black: 2 kg
  • Olive oil: 6 tablespoons
  • Garlic: 5 teeth
  • Onion: 3
  • Sausage meat: 200 gr
  • White wine: to taste.
  • Lemon: 2
  • Chili: taste.
  • Cilantro or parsley, minced taste.


After thoroughly washed leave the clam sauce for 1 hour /- covered water with a little salt, in order to lose the sand. In a saucepan wide, bring to heat the olive oil and garlic walked on. When these alourarem but do not burn, add them to the onions peeled and chopped, and let refugar over very low heat. When the onion is translucent join you to the sausage cut into thick slices. Season with salt and chilli, and adding small portions of white wine and let it cook until the sausage baked. Add the clams, rinsed and drained, cover the saucepan and cook until they open stirring several times the casserole. Reject those that remain closed. Already out of the heat, sprinkle with a little lemon juice, sprinkle with coriander or chopped parsley and serve immediately with pieces of lemon.
