Ingredients

  • Chicken, without the bone, open to the environment: 4 boobs
  • Vanilla, divided lengthwise: 2 pods
  • Sultanas: 2 tablespoons (soup)
  • Sherry: 60 ml
  • Unsalted butter: 50 gr
  • Large onion, cut into thin slices: 1
  • Flour: 2 1/2 tablespoons (soup)
  • Chicken broth: 480 ml

Directions

Place the vanilla in a small bowl and the sultanas in another small bowl. Pour half of Sherry on the vanilla and sultanas. Leave to macerate for 30 minutes. Heat the butter in a frying pan, add the chicken and sauté during 5 minutes each side. Remove the chicken from the pan and set aside. Put the onion in the frying pan and let it stir-fry until transparent. Add the flour and stir continuously. Cook until the flour is golden. Add the chicken broth continuing always moving. Leave to cook until the mixture thickens. Reduce heat, add the chicken pieces, vanilla, and raisins with the Sherry where they were immersed. Continue to cook with a fire lowest for 15 minutes.
